Hi Danielle. Could you tell me where I can get the lids that hold the airlocks please ? thanks
danielle says
I sell airlocks in the store here: https://www.fermentedfoodlab.com/store/#!/Sauerkraut-&-Pickles/c/23349534
If you just want the lid rings that hold a waterless airlock in place, they come with the mason jar. Is this what you mean?

Hi there. I have some questions for you related to fermented chili sauce. Primarily if you can ferment the sauce in the sun and when to add ingredients ie lemon juice.
danielle says
I’m not sure about fermenting in the sun. My method for fermenting hot sauce is in this post here:
https://www.fermentedfoodlab.com/easy-lacto-fermented-hot-sauce/
Most ingredients you can ferment with the chilis. You can add lemon juice or vinegar at the end when you blend it all up.

Thanks for the reply. I had read your earlier article. The reason I’m asking is because I found a chili sauce that I really enjoy. On the bottle is says “placing the bottles in the warm sun to be cured and gently cooked for 10 days, shaken twice a day.” There’s also a picture which looks as though they don’t have airlocks on the top of the bottle. https://uploads.disquscdn.com/images/0dd4d48e65f5ecf7cbc5e88e6ef1d91e85e162c6a2d763102a7b100510887e26.png

I would try doing it then. Sounds like it’s another method of fermenting chilis. Go for it!
Jonathan Corpuz says
It is somewhat similar to making gochujang.

Cool. I’ll look into that. Thanks
