Hello fellow fermenters, enthusiasts and all of you that just plain love fermented foods! I’ve been on an Autoimmune Paleo diet for over two weeks now. I am committed to healing and sealing my gut so I can free myself of digestive and skin issues once and for all. It’s a strict elimination diet where you basically don’t eat any foods that could cause inflammation in your gut and then you slowly add foods back into your diet after four weeks to see what causes reactions in your body and what is safe for you to eat. So two more weeks to go!
Fermented foods play a huge part in the healing process and I have a noticed a big difference in my digestion and energy levels since I adopted them in my daily diet. Sometimes I eat them alone, as a side to a meal and sometimes I add them to a dish; like this arugula salad i made for lunch. Adding the Apple Ginger Sauerkraut and Pickled Red Onions to the salad adds a nice burst of flavor, probiotics and enzymes that help digest the meal. And not to mention it adds an amazing color. I definitely eat with my eyes first!
The Arugula and Smoked Salmon Salad with Sauerkraut is one of the top salads I eat weekly. I hope you enjoy!
- 2 cups organic arugula
- Smoked Salmon
- 3 radishes
- ¼ Avocado
- ½ cup cucumber sliced
- ¼ cup Apple Ginger Sauerkraut with Oranges
- Fermented Onions (optional)
- Capful of olive oil
- Capful of Apple Cider Vinegar
- Pinch sea salt
- Place arugula in a bowl and add the olive oil, apple cider vinegar and sea salt. Stir the arugula until it is well coated.
- Top the salad with the rest of the ingredients and enjoy!
